Exciting changes are coming to Steam Pub as they welcome a new chef to the kitchen. A Philadelphia native with over 30 years in the kitchen, Chef Josh Bullock began his culinary journey cooking alongside his grandmother and washing dishes at age 11. From fine dining to dive bars, he’s mastered the art of bold flavors and creative combinations. Featured on Food Network’s Diners, Drive-Ins and Dives, Best of Philly, and honored with FARE’s Restaurant of the Year, Josh is as passionate about mentoring his team as he is about crafting unforgettable dining experiences. Now at Steam Pub, he’s serving up food that inspires, surprises, and connects.

INSPIRED BY FAMILY TRADITION

What initially inspired Chef Josh to become a chef was a holiday tradition in his family – from the time he was a young boy, everyone had to cook something for the holiday dinners. He got his first real taste of cooking while making fresh pasta, sauce from scratch and meatballs and sausage with his Granzo at a very young age, and was instantly hooked. His Granzo ran a bakery, and he used to love helping her in the kitchen there as well.

WHAT CHEF JOSH BRINGS TO STEAM

With every chef comes a different palate and Chef Josh believes he will bring a fresh new outlook to Steam. The flavors, philosophy, and techniques are all unique to Chef Josh and his creativity has been inspiring the whole building. He plans to bring new, fresh flavors and ideas, mixed with new takes on the food Steam's guests have always loved. 

Chef Josh has worked with Steam Pub team since they opened, but is excited to officially work as part of the team on a full time basis. He stated, “The staff is here is absolutely awesome. I'm already loving being part of the team. Everyone is so enthusiastic and works so hard, and the entire team really brings great energy and excitement. My sous chefs Brad Inlander and Roberto Duran are two of the most talented guys I've ever worked with, and I'm excited to both learn from them, and teach them a few things.”

UNIQUE, UNEXPECTED DISHES

Chef Josh uses seasonal, local ingredients when possible, combining unique flavors to create delicious, unexpected dishes. Some of his favorite fall flavors include caramel, apples, maple, ginger and cranberry. He believes fall is the best season for flavors – it offers the perfect balance of sweet and savory.
